Ingredients

  • 2 Eggs
  • 2 Egg whites
  • ¾ c Milk, skim
  • 1 lb Frozen spinach, thawed, squeezed dry and cooled
  • 4 oz Cream cheese, ⅓ less fat, softened
  • 1 c Feta cheese, divided
  • 1 t Black pepper
  • 1 t Red pepper flakes, optional

Directions

  1. PREHEAT oven to 375˚F.
  2. WHISK eggs, egg whites and milk in a bowl.
  3. ADD spinach, cream cheese, ½ c feta, black pepper and red pepper flakes. MIX well.
  4. SPREAD into a 9 inch pie dish and TOP with remaining feta cheese.
  5. BAKE for 45 minutes or until center is set. SERVE with baked chips.
