Ingredients

  • Cooking spray
  • 2 c Zucchini, grated
  • ½ c Cheddar cheese, shredded, reduced fat
  • 1 t Garlic powder
  • ½ t Black pepper
  • 1 c Bakery mix*, low-fat
  • 2 Eggs

*Bakery mix (baking mix) is a premixed baking product that includes flour, baking powder and other ingredients.

Directions

  1. In a large bowl, MIX zucchini, cheese and seasonings.
  2. STIR in eggs and bakery mix. MIX until well combined.
  3. HEAT a large skillet on medium heat. SPRAY with cooking spray.
  4. PLACE 2 tablespoons of mixture in the skillet. COOK until lightly browned 3-4 minutes each side.
  5. REPEAT with remaining batter.
