Ingredients

  • 6 c Cauliflower, diced (~1.5 lb)
  • 1 c Water
  • 1 T Olive oil
  • ½ c Onion, diced
  • 1 Jalapeño, seeded, diced
  • 2 t White wine vinegar
  • ¼ c Green onion, diced
  • 2 Garlic cloves, minced
  • ½ t Rosemary, dried
  • ¼ c Parsley, chopped

Directions

  1. PLACE cauliflower and water in a medium bowl. MICROWAVE for 3-4 minutes until cauliflower is semi tender. DRAIN.
  2. HEAT olive oil in a large skillet. ADD onion, jalapeno and white wine vinegar. STIR to combine.
  3. ADD cauliflower, green onion, garlic cloves and rosemary. SAUTE’ on medium-high until cauliflower is caramelized as desired (slightly brown).
  4. TOP cauliflower with parsley and SERVE.
