  • 2 T Lemon
  • 1 T Olive oil
  • ⅛ t Salt
  • ½ t Pepper
  • 1 ½ c Grapes, green, divided (1 c halved)
  • 5 c Spinanch
  • 2 ½ c Cucumbers, sliced and quartered
  • ⅓ c Red onion, sliced thinly
  • ½ c Feta cheese
  • Lemon zest, optional


  1. In a blender MIX lemon juice, olive oil, salt, pepper and ½ c grapes until pureed.
  2. TOSS spinach, cucumbers, onion and grapes in a large bowl.
  3. DRIZZLE dressing on top of the salad and TOSS. GARNISH with feta cheese and lemon zest, if desired.
