c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • 4 Potatoes, red, quartered (~ 2 lb)
  • ¼ c Mayonnaise, low-fat
  • ¼ c Ranch dressing, Get Fresh! recipe
  • 1 c Celery, diced
  • ¼ c Green onions, chopped
  • 2 Eggs, hardboiled, yolks removed, chopped
  • ¼ t Salt
  • ½ t Pepper


  1. COOK potatoes in boiling water for 15-20 minutes, until tender.
  2. DRAIN and PLACE in a small bowl. CHILL potatoes in the refrigerator.
  3. In a large bowl, MIX mayonnaise, ranch dressing, celery, green onion, egg whites, salt and pepper.
  4. When potatoes are cool, ADD them to the dressing mixture and TOSS.
