c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • ¼ c Oil
  • 2 t Sugar substitute
  • ¼ t Salt
  • 3 T Red wine vinegar
  • 2 can Corn, low sodium, drained and rinsed (15.25 oz ea)
  • ½ c Bell pepper, chopped
  • 1 c Celery, chopped
  • 2 c Cucumber, chopped
  • 1 c Onion, chopped
  • Black pepper to taste


  1. WASH hands with soap and water.
  2. WHISK oil, sugar substitute, salt and red wine vinegar in a medium bowl.
  3. ADD vegetables and TOSS.
  4. CHILL in the refrigerator.
