Ingredients

  • 1 Sweet potato, large, cubed (~ 3 c)
  • 2 Beets, large, cubed (~ 4 c)
  • 2 T Olive oil
  • ½ t Allspice
  • 1 T Sugar
  • Cooking Spray

Directions

  1. PREHEAT the oven to 350°F.
  2. PLACE potatoes and beets in a large bowl and TOSS with olive oil, allspice and sugar.
  3. PLACE vegetables on a baking sheet sprayed with cooking spray. BAKE uncovered for 35-45 minutes until sweet potatoes are fork tender.
