Ingredients

  • 32 oz Chicken broth, fat-free, reduced sodium
  • 1 c Brown rice, dry, instant
  • 1 c Celery, chopped
  • ½ c Bell pepper, chopped
  • ½ c Onion, chopped
  • 2 cans Kidney beans, drained and rinsed (15 oz each)
  • 2 Garlic cloves, minced
  • ½ T Paprika
  • ½ t Garlic powder
  • ½ t Onion powder
  • ½ t Oregano, dried
  • ¼ t Black pepper
  • ¼ t Cayenne pepper

Directions

  1. WASH hands with soap and water.
  2. Add all ingredients to a large stock pot.
  3. COVER and bring to a BOIL.
  4. REDUCE to a SIMMER and COOK for 15 minutes.
  5. UNCOVER and continue cooking for another 10 minutes until rice is done and mixture has thickened slightly.
