Ingredients

  • 1 t Margarine
  • 2 Garlic cloves, chopped
  • ½ c Celery, chopped
  • 4 Pork chops, boneless, lean, ¼ lb each
  • 3 Red potatoes, medium, quartered
  • 2 c Baby carrots
  • 1 Onion, medium, quartered
  • 1 can Cream of mushroom soup, reduced fat, lower sodium (10 ¾ oz)
  • ¼ c Water

Directions

  1. In a skillet over medium heat, MELT margarine. ADD garlic and celery; SAUTÉ for 3-4 minutes.
  2. BROWN pork for 3 minutes on each side. ADD the potatoes, carrots and onion.
  3. COMBINE soup and water and POUR over the top of the skillet mixture.
  4. COVER and simmer for 35 - 40 minutes or until the vegetables are tender.
