Ingredients

  • 2 c Rotini pasta, whole wheat, dry
  • 1 c Bell pepper, chopped
  • ½ c Onion, chopped
  • 1 c Mushrooms, sliced
  • ½ c Pepperoni, turkey
  • 1 can Tomato sauce, no salt added (15 oz)
  • 1 t Basil, dried
  • ½ t Oregano, dried
  • 1 t Red pepper flakes, optional
  • ¼ c Olives, black, sliced, drained and rinsed
  • 1 c Mozzarella cheese, part skim
  • 1 T Parmesan cheese

Directions

  1. COOK pasta as directed, omitting salt and fat. DRAIN and SET aside.
  2. In a large skillet COOK the bell pepper and onion over medium heat until crisp tender (3-4 minutes). STIR often.
  3. ADD the mushrooms and pepperoni, COOK until mushrooms soften.
  4. ADD tomato sauce, basil, oregano, red pepper flakes, and olives. COVER and SIMMER for 5 minutes.
  5. STIR in cooked pasta and mozzarella cheese. REMOVE from heat and SPRINKLE with parmesan.
