Ingredients

  • 8 oz Spaghetti, dry
  • 2 T Margarine
  • 2 Garlic cloves, minced
  • 10 oz Spinach
  • ½ c Parmesan cheese divided (¼ c & ¼ c)
  • ¼ t Salt
  • ¼ t Pepper

Directions

  1. COOK pasta according to the package. Omit salt and fat. RESERVE ½ c pasta water and SET aside.
  2. Using the same pot, MELT 2 T of margarine over medium heat. ADD 2 garlic cloves and COOK 2-3 minutes. ADD spinach and TOSS to COAT.
  3. ADD in cooked pasta. Gently TOSS. ADD reserved pasta water if needed or if it is too try.
  4. STIR in ¼ c parmesan cheese, salt and pepper. TOSS to combine. TOP with remaining cheese and SERVE.
