Ingredients

  • 1 lb Ground beef, extra lean
  • 2 Garlic cloves, minced
  • 1 can Tomatoes, diced, drained and rinsed (14 ½ oz)
  • 2 cans Spaghetti sauce, reduced sodium (14 oz)
  • 1 Egg
  • 1 Egg white
  • 1 c Cottage cheese, low fat
  • 1 T Italian seasoning
  • 6 Lasagna noodles, oven ready/no cook, whole wheat
  • ½ c Cheddar cheese, reduced fat
  • ½ c Mozzarella cheese, part skim

Directions

  1. In a large skillet, COOK beef and garlic over medium-high heat until cooked through. RINSE and DRAIN.
  2. In a large bowl MIX meat, tomatoes and sauce.
  3. In a small bowl, MIX egg, egg white, cottage cheese and Italian seasoning.
  4. LAYER the ingredients in a large skillet in the following order: 1 c meat sauce, 3 noodles breaking to fit in the skillet and ½ c cottage cheese mixture.
  5. REPEAT layers with ½ remaining meat mixture, remaining noodles, and remaining cheese. TOP with remaining meat then shredded cheese.
  6. Bring to a BOIL. REDUCE heat; COVER and SIMMER for 20-25 minutes or until noodles are tender. REMOVE from heat and SERVE.
