Ingredients

  • ¾ c Bakery mix, low-fat
  • ¼ c Milk, skim
  • 2 Egg whites
  • 1 c Mozzarella cheese, part skim
  • ½ c Turkey pepperoni, chopped
  • ¼ c Pizza sauce
  • 1 T Basil
  • Cooking spray
*Try other pizza toppings in the mixture: onions, peppers, olives, etc.

Directions

  1. PREHEAT oven to 375°F.
  2. In a bowl, MIX bakery mix, milk, egg whites, cheese, pepperoni, pizza sauce and basil.
  3. SPRAY a mini muffin tin with cooking spray. PLACE 1 tablespoon of the mixture in each mini muffin cup.
  4. BAKE for 25-30 minutes. ALLOW to cool for 5 minutes.
