Ingredients

  • 12 oz Egg noodles, whole wheat
  • 16 oz California vegetables, frozen
  • ½ c Corn, frozen
  • ½ c Peas, frozen
  • 1 cn Cream of mushroom soup, condensed, lower sodium, lower fat (10.5 oz)
  • 3 Garlic cloves, minced
  • 2 T Parsley, dried
  • 1 t Pepper
  • 2 cn Chicken, rinsed and drained (12.5 oz/ea)
  • 4 oz Cream cheese, 1/3 less fat
  • 2 c Chicken broth, lower sodium
  • ½ c Parmesan cheese, shredded
  • 1 T Onion and herb, no salt seasoning

Directions

  1. In a large stockpot COOK noodles omitting salt and fat.
  2. The last 2-3 minutes of cooking ADD all the frozen vegetables. DRAIN and RETURN to the pot.
  3. ADD remaining ingredients. MIX well and COOK on low/medium heat until heated through. SERVE.
