Ingredients

  • 12 oz Rotini, whole wheat
  • 1 T Olive oil
  • 3 Garlic cloves, minced
  • ½ c Onion, diced
  • 1 cn Artichokes, quartered, rinsed, drained (14.5 oz can)
  • 2 cn Diced tomatoes, with juice (14.5 oz can)
  • 4 oz Cream cheese, light
  • ½ c Vegetable broth
  • ½ t Nutmeg
  • ¼ t Black pepper
  • ¼ t Crushed red pepper, optional
  • ½ c Parmesan cheese, grated

Directions

  1. COOK rotini according to directions, omitting salt and fat. DRAIN and SET aside.
  2. HEAT olive oil in large skillet. ADD onions and garlic and SAUTÉ for 2-3 minutes.
  3. ADD artichokes and tomatoes. STIR and COOK for 8-10 minutes.
  4. ADD spices, cream cheese and broth. SIMMER for 2-3 minutes.
  5. ADD pasta and parmesan cheese. STIR until evenly coated.
