Ingredients

  • 2 c Rotini pasta, whole wheat, dry
  • 3 T Olive oil
  • 3 T Lemon juice
  • 2 ½ t Italian seasoning
  • ⅛ t Red pepper flakes
  • 1 ½ c Cucumber, chopped
  • ½ c Tomatoes, cherry, halved
  • ½ c Carrots, sliced
  • ¼ c Red onion, minced
  • 3 T Parmesan cheese

Directions

  1. COOK pasta according to the directions, omitting the salt and fat.
  2. DRAIN and SET aside.
  3. In a large bowl, WHISK oil, lemon juice, Italian seasoning and red pepper flakes.
  4. To the bowl, ADD cooked pasta, cucumber, tomato, carrots, red onion and parmesan cheese.
  5. MIX well and CHILL.
