c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • Cooking spray
  • 8 oz Chicken breast, cubed
  • 1 bag Lettuce, mixed greens and spinach (5.5 oz)
  • ⅓ c Orange juice
  • 2 T Olive oil
  • 2 T Honey
  • Black pepper to taste
  • ½ c Cherries, dried
  • 1 Cucumber, medium,
  • sliced thin (1½ c)
  • ½ c Red onion, sliced


  1. SPRAY small skillet with cooking spray. COOK chicken in the skillet until done.
  2. In a large bowl, WHISK together orange juice, oil, honey and pepper.
  3. ADD lettuce to the large bowl and TOSS to coat.
  4. TOP lettuce with chicken, cherries, cucumber and red onion. SERVE.
