Ingredients

1 ¼ lb Chicken, boneless, skinless, cut into chunks
4 c Water
14.5 oz Chicken broth, lower sodium
2 T Onion, dried, minced
½ t Black pepper
½ t Thyme
1 t Parsley, dried
1 c Carrots, diced
1 c Celery, diced
1 ¼ c Bakery mix, low-fat
¼ c Water

Directions

  1. In a large stock pot, PLACE chicken, 4 c water, broth, onion, pepper, thyme, parsley, carrot and celery. HEAT on high until it comes to a boil. COOK for 5 minutes. REDUCE heat to medium and continue to COOK for another 6-8 minutes.
  2. While chicken mixture is cooking, prepare the dumplings. MIX bakery mix and ¼ c of water in a medium bowl. POUR dough onto a floured surface and lightly KNEAD.
