Ingredients

  • Cooking spray
  • 1 lb Chicken breast, skinless and boneless, cubed
  • 2 c Broccoli florets
  • 2 Red bell peppers, sliced
  • 2 Yellow squash, sliced
  • ¼ c Water
  • 1 can Diced tomatoes, no salt added, drained and rinsed (14 oz.)
  • ½ t Basil
  • ½ t Oregano
  • ½ t Black pepper
  • 3 c Penne pasta, whole-wheat, cooked and drained, omitting salt
  • ¼ c Parmesan cheese, grated

Directions

  1. WASH hands with soap and water.
  2. SPRAY a skillet with cooking spray.
  3. Over medium high heat, COOK chicken until it reaches 165 F.
  4. ADD broccoli, peppers and squash to skillet. COVER with a lid and SIMMER for 3 to 4 minutes.
  5. ADD water, tomatoes, herbs and pepper. COOK for 5 more minutes.
  6. TOSS chicken, vegetable mixture and pasta in skillet. SPRINKLE with parmesan cheese.
