  • 1 ½ lb Ground beef, extra lean
  • 1 c Oats, quick cooking
  • 2 Eggs, medium
  • 1 can Tomato sauce, no salt added (8 oz)
  • 1 Onion, small, chopped
  • 1 Bell pepper, green, medium, chopped
  • ½ t Thyme
  • ½ t Garlic powder
  • ½ t Celery seed
  • ¼ t Black pepper
  • 1 t Rosemary


  • 1 can Tomato sauce, no salt added (8 oz)
  • 2 T Yellow mustard
  • 3 T Brown sugar


  1. PREHEAT oven to 350° F.
  2. In a large bowl, COMBINE ground beef, oats, eggs, tomato sauce, onion, peppers and seasonings until well mixed.
  3. FORM into a loaf and PLACE in a 9x5 inch loaf pan.
  4. In a small bowl, MIX tomato sauce, mustard and brown sugar, until smooth.
  5. MAKE an indention in top of loaf, then POUR ½ of topping over meatloaf.
  6. BAKE 1 hour. DRAIN fat. POUR reserved topping mixture over loaf.
  7. BAKE 10 minutes more or until internal temperature is 160° F.
  8. REMOVE from oven and let REST 15 minutes for easier slicing.
