Ingredients

  • Cooking spray
  • 1 lb Ground beef, extra lean
  • ¾ c Barbecue sauce
  • 2 c Bakery mix*, low-fat
  • ½ c Water
  • ½ c Cheddar cheese, shredded, reduced fat

*Bakery mix (baking mix) is a premixed baking product that includes flour, baking powder and other ingredients.

Directions

  1. PREHEAT oven to 375°F. SPRAY a 12-cup muffin tin with nonstick spray and SET aside.
  2. In a skillet, COOK ground beef over medium high heat until brown. DRAIN and RINSE in a colander.
  3. ADD barbecue sauce and COOK until heated through then SET aside.
  4. In a medium bowl, MIX bakery mix and water until combined.
  5. KNEAD dough on a floured surface into a loaf shape. DIVIDE dough into 12 equal segments.
  6. PLACE each piece of dough in a muffin cup. Using your fingers, FORM it into the muffin cup. PRESS the dough up over the side and the rim of the muffin cup.
  7. MEASURE about 3 tablespoons of beef mixture and PLACE in dough cups. TOP with about 2 teaspoons of cheese.
  8. BAKE for 18-20 minutes.
