  • Cooking spray
  • 2 c Bakery mix*, low-fat
  • ⅔ c Milk, skim
  • ¼ c Applesauce
  • 2 T Sugar
  • ⅓ c Brown sugar
  • ¼ t Cinnamon
  • 2 T Margarine

*Bakery mix (baking mix) is a premixed baking product that includes flour, baking powder and other ingredients.


  1. PREHEAT oven to 400˚F.
  2. SPRAY a mini-muffin tin with cooking spray.
  3. MIX all ingredients together in a medium bowl.
  4. SPOON approximately 1 T of batter into each muffin cup. Makes 36 mini muffins.
  5. BAKE 9-12 minutes or until tops spring back when touched.
