Ingredients

  • 1 can Pineapple chunks, in juice (20 oz)
  • 1 can Pear halves, in juice (15 oz)
  • 1 can Peach halves, in juice (15 oz)
  • 1 can Apricot halves, in light syrup, drained, rinsed (15 oz)
  • 5 Maraschino cherries, drained, rinsed, sliced
  • 3 T Cornstarch
  • ¼ c Brown sugar
  • 1 t Curry powder
  • ¼ c Pecans, chopped

Directions

  1. DRAIN pineapple, pear and peach juice into a small bowl. MEASURE out 2 cups of juice to use.
  2. To the 2 c of fruit juice, ADD cornstarch, brown sugar and curry powder. MIX well.
  3. POUR juice mixture into a large skillet. COOK on medium-low and STIR until juice has thickened slightly.
  4. ADD fruit and pecans to liquid mixture.
  5. COVER and REDUCE heat to medium-low. HEAT about 15 minutes or until all fruit is heated through and sauce is thickened.
  6. SERVE and SPRINKLE granola on top, if desired.
