Ingredients

  • Cooking spray
  • 1 c Peaches, frozen, thawed, chopped
  • 2 T Sugar substitute blend
  • 2 t Cornstarch
  • ¼ t Lemon juice
  • 2 c Blackberries, frozen, thawed
  • ¼ t Lemon zest
  • 8 Egg roll wrappers
  • ¼ c Powdered sugar, optional

Directions

  1. PREHEAT oven to 400˚F. SPRAY a baking sheet with cooking spray, SET aside.
  2. MIX all ingredients except eggroll wrappers in a bowl.
  3. PLACE 2 T of the filling in the middle of the wrap spreading it horizontally from corner to corner.
  4. FOLD the bottom corner over the filling halfway. FOLD both sides in towards the middle.
  5. WET the remaining top triangle edges with water then ROLL the eggroll away from you over the flap to seal tightly.
  6. PLACE eggrolls on baking sheet and SPRAY with cooking spray.
  7. BAKE for 10-12 minutes, TURN rolls halfway through cooking, and let COOL for 10 minutes.
  8. SPRINKLE with powdered sugar if desired.
