  • Cooking spray
  • 1 c Pumpkin, canned
  • ½ c Bakery mix, low fat
  • ½ c Sugar substitute
  • 1 c Evaporated milk, fat free
  • 1 T Margarine
  • 1 ¾ t Pumpkin pie spice, divided
  • 1 t Vanilla
  • 1 Egg
  • 2 Egg whites
  • ½ c Pecans, chopped, optional
  • 1 ½ c Whipped topping, lite


  1. PREHEAT oven to 350˚F. SPRAY a 9-inch pie plate with cooking spray.
  2. In a medium bowl, STIR pumpkin, bakery mix, sugar substitute, milk, margarine, 1 ½ t of pumpkin pie spice, vanilla and eggs until blended.
  3. ADD pecans and POUR into pie plate.
  4. BAKE on bottom third of the oven for 35-40 minutes or until knife inserted in the center comes out clean.
  5. COOL completely, about 1 hour.
  6. In a small bowl MIX whipped topping and ¼ t pumpkin pie spice and GARNISH.
