Ingredients

  • Cooking spray
  • 1 Egg
  • 1 Egg white
  • 2 c Milk, skim
  • 1 T Margarine, softened
  • Brown sugar
  • 1 t Cinnamon
  • ½ t Nutmeg
  • 1 t Vanilla
  • 7 slc Whole wheat bread, cubed
  • ½ c Raisins, dried cranberries, or other dried fruit

Directions

  1. PREHEAT oven to 350˚F. SPRAY an 8x8 baking dish with cooking spray.
  2. In a large bowl, combine eggs, milk, margarine, brown sugar, cinnamon, nutmeg and vanilla.
  3. STIR in bread cubes and dried fruit.
  4. Allow mixture to REST for 30 minutes.
  5. POUR mixture into the baking dish, and BAKE for 50-55 minutes.
