Ingredients

  • Cooking Spray
  • 2 Garlic cloves, minced
  • 1 cn Black beans, drained and rinsed (15.5 oz)
  • ½ c Onion, chopped
  • ½ c Bell pepper, chopped
  • 1 pkg Taco seasoning, Get Fresh! recipe
  • 4 Eggs
  • 4 Egg whites
  • 1 c Cheese, reduced fat, shredded (cheddar, Monterey jack, etc.)
  • 8 Whole wheat tortillas
  • Salsa for serving, if desired

Directions

  1. SPRAY a medium saucepan with cooking spray. ADD garlic, onion and bell pepper and SAUTE until heated through 5 minutes. ADD black beans and taco seasoning and SAUTE until heated through. SET aside to COOL.
  2. In a small bowl WHISK 4 eggs and 4 egg whites.
  3. ADD eggs to the bean mixture and SCRAMBLE until COOKED through.
  4. WARM tortillas in the microwave so they are easier to assemble.
  5. PLACE 1/2 c of the scrambled egg mixture in a line down the center of 1 tortilla. ADD 1 rounded tablespoon of cheese to the tortilla.
  6. ROLL the tortilla to form a burrito then WRAP in foil to freeze.
  7. To reheat: UNWRAP the burrito and discard the foil. PLACE in the microwave for 2-3 minutes until warmed. OR to reheat in the oven, BAKE at 350°F for 20-25 minutes.
