  • Cooking Spray
  • 1 ½ c Bakery mix*, low-fat
  • ½ c Oats
  • ½ c Brown sugar
  • 1 t Cinnamon
  • 1½ T Sugar substitute
  • 2 T Honey
  • 1 can Carrots, rinsed, drained, mashed (15.5 oz)
  • ½ c Water
  • 1 Egg white
  • ½ t Vanilla

*Bakery mix (baking mix) is a premixed baking product that includes flour, baking powder and other ingredients.


  1. PREHEAT oven to 375˚F, and SPRAY 24-cup mini muffin pan with cooking spray.
  2. MIX bakery mix, oats, brown sugar, cinnamon and sugar substitute.
  3. ADD honey, carrots, water, egg white and vanilla. STIR until well mixed.
  4. SPOON 2 T in each mini muffin cup and BAKE for 20 minutes.
*If using a regular 12-cup muffin tin, bake for 25-28 minutes.
