Ingredients

  • ½ c Applesauce
  • 1 c Sugar
  • 1 Egg
  • 4 Ripe bananas, mashed
  • ¼ c Water
  • 1 c All-purpose flour
  • 1 c Whole wheat flour
  • 1 c Quick-cooking oats
  • 1 t Baking soda
  • 1 t Baking powder
  • ½ t Salt
  • ½ c Blueberries or strawberries, (fresh or frozen)

Directions

  1. In a mixing bowl, MIX applesauce and sugar.
  2. ADD egg mixing well. ADD bananas and water; MIX.
  3. COMBINE flours, oats, baking soda, baking powder and salt in another bowl.
  4. ADD to the applesauce mixture, STIR just until moistened.
  5. FOLD in berries. SPOON batter into greased muffin tins, filling about ⅔ full.
  6. BAKE at 350°F for 25-28 minutes until light brown. COOL for 10 minutes; RE-MOVE from pan.
