  • 1 c Flour
  • ½ c Whole wheat flour
  • 1 ¼ t Baking Soda
  • 1 t Salt
  • 1 t Cinnamon
  • ½ t Nutmeg
  • 1 T Margarine, softened
  • ½ c Brown sugar
  • 1 c Pumpkin
  • ½ c Cranberry sauce
  • 1 Egg white
  • 1 Banana, mashed


  1. PREAHEAT oven to 350˚F.
  2. SIFT flour, baking soda, salt, cinnamon and nutmeg in a large bowl.
  3. BEAT margarine, brown sugar, pumpkin, cranberry sauce, egg white and banana until smooth.
  4. Slowly ADD in flour mixture until combined.
  5. POUR into a 9x5 loaf pan and BAKE about 1 hour.
  6. COOL in the pan for 10 minutes before removing to cool completely.
