c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • Cooking spray
  • 12 oz Cauliflower, riced, cooked, drained
  • 1 ½ c Mozzarella cheese, shredded, divided
  • ½ c Parmesan cheese, shredded
  • 1 Egg
  • ¼ t Black pepper
  • ¼ t Garlic powder
  • ¼ t Onion powder
  • ⅓ c Pizza sauce


  1. PREHEAT oven to 425°F.
  2. SPRAY a 12-cup muffin tin with cooking spray.
  3. In a large bowl, COMBINE cauliflower, 1 c mozzarella cheese, parmesan cheese, egg and seasonings.
  4. PLACE 2 T of mixture in each cup. If there is any leftover, DIVIDE out evenly.
  5. BAKE 15-20 minutes until golden brown.
  6. TOP with 1 t pizza sauce and 2 t of cheese. BAKE for 3 minutes. Allow to COOL for 5 minutes before removing and serving.
