Ingredients

  • 1 can Beans with sauce, drained, mashed, (15.5 oz)
  • 7.5 oz Cream cheese, jalapeño flavored, softened
  • ½ c Green onion, chopped, divided (¼ c and ¼ c)
  • ½ c Cheddar cheese, reduced fat
  • ½ c Peanuts, chopped

Directions

  1. In a medium bowl, MASH the beans with a potato masher or fork.
  2. ADD cream cheese, ¼ c green onion and cheddar cheese.
  3. FORM mixture into a ball. ROLL in remaining green onion and peanuts until well coated. Refrigerate or serve immediately.
*Serve with pita chips, carrot sticks, celery sticks, snap peas or whole grain toasts.
