Ingredients

  • 2 ½ c Cornflakes
  • ¼ t Cayenne powder
  • ¼ t Onion powder
  • 1 Egg whites
  • ½ c Buttermilk, low-fat
  • 2 T Flour
  • 1 Onion, white, cut into rings (½ - ¼ in thick)
  • Cooking Spray

Directions

  1. PREHEAT oven to 400°F.
  2. In a food processor, pulse cornflakes until fine crumbs.
  3. TRANSFER to a small pan or bowl, ADD cayenne powder and onion powder and MIX.
  4. In a medium bowl, WHISK egg, buttermilk and flour.
  5. DIP onion rings in egg mixture (letting excess drip off) and then DIP in cornflakes.
  6. PLACE on a baking sheet sprayed with cooking spray.
  7. PLACE in the oven and BAKE for about 16 minutes or until golden brown.
