Ingredients

  • 16 oz Cottage Cheese, low fat
  • 10 oz Frozen spinach, thawed, drained well
  • 1 c Mozzarella cheese, skim
  • 2 Eggs
  • 2 Egg whites
  • ½ c Red bell pepper, chopped
  • ⅓ c Parmesan cheese, grated
  • 1 t Oregano, dried
  • 1 clove Garlic, minced
  • ½ t Red pepper flakes
  • Cooking Spray

Directions

  1. PREHEAT the oven to 350°F.
  2. MIX all ingredients until well blended. SPRAY a 12 cup muffin tin with cooking spray.
  3. SPOON ⅓ c mixture into each muffin cup. Evenly DIVIDE any mixture that is leftover between the 12 cups.
  4. BAKE for 30 minutes or until center is set. Let SET for 5 minutes.
