Ingredients

  • 1 c Zucchini, cut into 1” cubes
  • 1 Tomato, medium, chopped into 1" chunks
  • ¼ c Bell pepper, yellow, diced
  • ⅛ c Onion, diced
  • ½ T Mayonnaise, low-fat
  • Pepper to taste

Directions

  1. COMBINE zucchini, tomato, bell pepper and onion in a small sauce pan.
  2. COOK on medium-low heat until vegetables are tender, about 20 minutes, stirring occasionally.
  3. REMOVE from stove top and mix in the mayonnaise. ADD pepper to taste.
