Ingredients

  • Cooking spray
  • ¾ c Sugar substitute
  • 1 c Whole wheat flour
  • 1 c Flour
  • 1 t Baking soda
  • ⅔ c Milk, skim
  • ⅔ c Yogurt, vanilla, nonfat
  • 1 Egg
  • 1 Egg white
  • ¼ c Orange juice
  • 1 c Cranberries, dried
  • ¼ c Almonds
  • 1 t Almond extract, optional

Directions

  1. PREHEAT oven to 350˚F. SPRAY a 12-cup muffin tin with cooking spray.
  2. WHISK sugar substitute, flours, baking soda in a large bowl.
  3. In another bowl, MIX milk, yogurt, egg and orange juice.
  4. FOLD milk mixture into flour mixture then gently ADD dried cranberries.
  5. SPOON ¼ c batter into each muffin cup and BAKE for 20 minutes.
