Ingredients

  • 1 ½ c Cheddar cheese, reduced fat, shredded
  • 4 T Margarine, cold
  • ¾ c All-purpose flour
  • ¼ t Red pepper flakes
  • ¼ c Evaporated milk, Fat-free

Directions

  1. PREHEAT the oven to 375˚F. In a bowl COMBINE cheese, flour and red pepper flakes.
  2. CUT in margarine until it resembles coarse crumbs.
  3. ADD milk and STIR until the dough forms a ball. (The mixture may need to be combined with your hands).
  4. Take two 13x15 pieces of parchment   paper and place the dough between the 2 sheets. Using a rolling pin ROLL out the dough to less than ¼ inch thick.
  5. REMOVE the top parchment paper and place it on one of the baking sheets. USE the pizza cutter to CUT the dough into 50 1-inch squares. DIVIDE the crackers between parchment covered baking sheets.
  6. BAKE for 12-15 minutes until the edges are golden brown.
