Ingredients

  • 1 Whole wheat baguette, sliced 1/2 inch thick, 12 slices
  • 2 T Olive oil, divided
  • 1 Garlic clove, minced
  • ½ c Tomato, chopped
  • 1 Avocado, chopped
  • 1 T Balsamic vinegar
  • ¼ c Basil, fresh, sliced
  • 1 c Cucumber, diced

Directions

  1. PREHEAT oven on BROIL. PLACE sliced bread on a baking sheet and DRIZZLE 1 T olive oil on top. TOAST until golden brown.
  2. In a small bowl, MIX 1 T olive oil, garlic, tomato, avocado, balsamic vinegar, basil and cucumber.
  3. TOP toast evenly with avocado mixture.
