Ingredients

  • 1 lb Potatoes, cut into 1 ½ in chunks (with peel)
  • 1 lb Sweet potatoes, cut into 1 ½ in chucks (with peel)
  • ½ c Evaporated milk, fat-free
  • 2 T Margarine
  • 1 t Brown sugar
  • ¾ t Salt
  • ¼ t Pepper

Directions

  1. PLACE potatoes in a large pot of water, enough to cover. Bring to a BOIL and COOK until tender, 20-25 minutes.
  2. DRAIN the potatoes then MASH them in the pot to desired consistency.
  3. PLACE milk and margarine in a small bowl and MICROWAVE about 30 seconds or until margarine is melted.
  4. STIR in the milk mixture, brown sugar, salt and pepper. SERVE.
