Ingredients

  • Cooking Spray
  • 4 ½ c Sweet potatoes, mashed
  • ⅓ c Milk, skim
  • ½ c Sugar
  • ½ t Vanilla
  • 2 Eggs or egg mix, beaten
  • ¼ c Whole wheat flour
  • ½ c Brown sugar, light
  • ⅓ c Margarine
  • 1 c Pecans, chopped

Directions

  1. PREHEAT oven to 350°F. SPRAY a 9x13 inch baking dish with cooking spray.
  2. In a large bowl, MIX together mashed sweet potatoes, milk, sugar, vanilla and eggs. SPREAD mixture into the prepared baking dish.
  3. In a small bowl, MIX together brown sugar and flour. CUT in ⅓ c margarine until mixture is crumbly, then STIR in pecans. SPRINKLE topping over sweet potatoes.
  4. BAKE for 25 minutes in preheated oven or until golden brown.
