Ingredients

  • 1 T Olive oil
  • ½ c Bell pepper, chopped, green
  • ½ c Bell pepper, chopped, red
  • ½ c Onion, chopped
  • 2 Garlic cloves, chopped
  • ½ t Cumin
  • ½ t Chili powder
  • ½ t Oregano
  • 1 cn Hominy, rinsed and drained (15 oz)
  • 10 oz Corn, frozen (2 c)

Directions

  1. HEAT the skillet with olive oil over medium heat.
  2. ADD green/red bell pepper and onion. COOK 2-3 minutes until crisp-tender.
  3. STIR in the garlic, cumin, chili powder and oregano.
  4. ADD in the corn and hominy. COVER and COOK until heated through. STIR occasionally.
