Ingredients

  • Cooking spray
  • 2 t Minced onion, dried
  • 2 Eggs
  • 2 Egg whites
  • 2 c Milk, skim
  • ½ c Cheddar cheese, reduced fat
  • 4 Whole wheat bread slices, cubed
  • 3 c Kale, stems removed, roughly chopped
  • 12 oz Butternut squash, fresh, cubed, peeled (2 ½ c)
  • ¼ t Salt
  • 1 t Sage
  • ½ t Nutmeg

Directions

  1. PREHEAT oven to 375°F.
  2. SPRAY an 8x8 inch baking dish with cooking spray.
  3. In a large bowl WHISK minced onion, eggs, egg whites and milk.
  4. ADD the remaining ingredients and MIX well.
  5. TRANSFER mixture to an 8x8 inch baking dish and BAKE for 50 minutes.
  6. REMOVE from the oven and let SIT for 15 minutes before serving.
