  • 2 lb Potatoes, cut into bite sized pieces or wedges
  • 1 T Cornstarch
  • ½ t Garlic powder
  • ⅛ t Salt
  • ¼ t Pepper
  • Cooking spray
  • 2 t Margarine, melted
  • 2 Garlic cloves, minced
  • 1 t Lemon zest
  • 1 T Parmesan cheese, shredded


  1. PLACE a baking sheet in the oven and HEAT oven to 450°F. HEAT the baking sheet for about 5 minutes.
  2. TOSS potatoes, cornstarch, garlic powder, salt and pepper together in a medium bowl or in a large zip-top plastic bag.
  3. REMOVE baking sheet from oven and SPRAY pan with non-stick spray.
  4. PLACE potatoes, in a single layer, on a baking sheet. ROAST until browned around edges, about 30 minutes.
  5. MIX margarine, garlic, zest and parmesan cheese in medium bowl. REMOVE baking sheet from oven and FLIP potatoes.
  6. ROAST until potatoes are crisp and golden brown, 10-15 minutes more.
  7. TRANSFER potatoes to bowl with margarine mixture and TOSS until evenly coated. SERVE warm.
