c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • 1 lb Red skinned potatoes, quartered
  • 2 c Carrots, bite size
  • 8-10 Thyme sprigs, fresh
  • ½ c Parmesan cheese, shredded
  • 1 T Olive oil


  1. HEAT oven to 400°F.
  2. TOSS potatoes, carrots, thyme, cheese and oil in a large bowl.
  3. PLACE potato mixture on a baking sheet and ROAST until golden brown, 45-50 minutes, STIR once during roasting.

*May remove thyme leaves from the stem before cooking, if desired
