Ingredients

  • 1 lb Red skinned potatoes, cut into wedges
  • ½ T Cornstarch
  • ¼ t Garlic powder
  • ⅛ t Salt
  • ¼ t Pepper
  • 1 t Margarine, melted
  • 1 Garlic clove, minced
  • 1 t Lemon zest
  • Cooking spray

Directions

  1. PLACE a baking sheet in the oven and HEAT oven to 450° F.
  2. TOSS potatoes, cornstarch, garlic powder, salt and pepper together in a medium bowl.
  3. REMOVE baking sheet from oven and SPRAY pan with non-stick spray.
  4. PLACE potatoes, in a single layer, on a baking sheet. ROAST until browned around edges, about 30 minutes.
  5. MIX margarine, garlic and zest in medium bowl. REMOVE baking sheet from oven and FLIP potatoes.
  6. ROAST until potatoes are crisp and golden brown, 10-15 minutes more.
  7. TRANSFER potatoes to bowl with margarine MIX and TOSS until evenly coated. SERVE warm.
