c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • 4 Eggs
  • 4 Egg whites
  • 1 c Milk, skim
  • 1 c Bakery mix, low fat
  • 2 c Spinach, fresh, chopped
  • ¾ c Feta cheese (4 oz)
  • ¼ c Basil, fresh, chopped or 1 T dried
  • ½ t Red pepper flakes
  • 2 Garlic cloves, minced
  • Cooking spray
  • ½ Bell pepper, red, chopped


  1. In a large bowl, BEAT eggs, egg whites, bakery mix and milk until combined.
  2. ADD spinach, feta cheese, basil, red pepper flakes and garlic. STIR well.
  3. SPRAY a large skillet with cooking spray and HEAT on medium-medium/low heat.
  4. POUR mixture in the skillet SPREADING ingredients evenly.
  5. COVER and COOK for 5 minutes. SPRINKLE bell peppers on top, COVER and continue cooking for another 15-20 minutes or until set.
