Ingredients

  • 2 lb Potatoes, washed, unpeeled, chopped into 1” pieces
  • Water as needed
  • 3 T Margarine
  • ½ c Evaporated milk, fat-free, warmed

**Add roasted garlic if desired

Directions

  1. In a 4-quart saucepan, COMBINE potatoes and enough water to cover; HEAT to a boil over high heat.
  2. REDUCE heat to low; COVER and simmer 8-10 minutes or until potatoes are fork tender.
  3. RESERVE ¼ cup of cooking water. DRAIN potatoes. RETURN potatoes to saucepan.
  4. MASH potatoes with margarine. Gradually ADD warm fat-free evaporated milk, continuing to MASH potatoes until smooth and well blended. ADD reserved water if necessary.
  5. TRANSFER to a serving dish.
