c = cup, T = tablespoon, t = teaspoon, lb = pound, oz = ounce, fl oz = fluid ounce, pkg = package


  • 2 c Rice, brown, cooked
  • 2 T Olive oil
  • 5 c Zucchini, ½ in cubes
  • ½ c Green onions, sliced
  • 1 Garlic clove, minced
  • 1 t Garlic salt
  • ½ t Basil, dried
  • ½ t Sweet paprika
  • ½ t Oregano, dried
  • 1 can Tomatoes, diced, drained and rinsed (14.5 oz)
  • 1 c Cheddar cheese, reduced fat


  1. HEAT the oil in a large skillet over medium heat and COOK the zucchini, green onions and garlic for 5 minutes or until tender.
  2. SEASON with garlic salt, basil, paprika and oregano.
  3. MIX in cooked rice, tomatoes and cheese.
  4. Continue to COOK and STIR until heated through and SERVE.
