  • 8 Carrots, medium, quartered lengthwise (3 ½ c)
  • 1 T Olive oil
  • 1 T Balsamic vinegar
  • ¼ t Salt
  • ¼ t Pepper


  1. PREHEAT oven to 450°F. COVER a roasting pan with foil.
  2. In a bowl COMBINE all the ingredients and TOSS to coat.
  3. PLACE carrots on the pan and ROAST for about 15 minutes.
  4. TOSS occasionally until caramelized and slightly tender.
