  • 8 c Cauliflower florets (about 1 large head)
  • 2 T Olive oil
  • ⅛ t Salt
  • ¼ t Pepper
  • 2 T Balsamic vinegar
  • ½ c Parmesan cheese, shredded


  1. PREHEAT oven to 450˚F.
  2. TOSS cauliflower, oil, salt, pepper and balsamic vinegar in a large bowl.
  3. LAY foil on baking sheet. SPREAD cauliflower on foil and ROAST until it softens and browns, about 15-20 minutes. STIR and FLIP halfway through cooking.
  4. SPRINKLE with cheese and RETURN to the oven for 5-10 minutes until cheese is melted.
